Easy 2-Step Skillet Chicken and Broccoli

I whipped this up tonight trying to use up ingredients in the fridge. It turned out delicious and satisfying, even my 2 year old finished her plate (yes, even the broccoli!)



3 Large Chicken Breasts

2 cups broccoli florets

2 tbsp butter

1/2 cup Heavy Whipping Cream

2 tsp chicken seasoning rub

3/4 cup shredded Monterrey jack cheese

salt and pepper, to taste

How to Make It

Step 1

Season your chicken with seasoning rub, salt and pepper on both sides.

Heat 2 tbsp butter in a large skillet over medium-high heat. Add the chicken and cook for 5 minutes each side or until well browned on both sides.


Step 2

Add heavy whipping cream and broccoli to the skillet and heat to a boil.  Reduce the heat to low and add Monterrey Jack cheese, mix well. Cover and cook for 5 additional minutes or until cheese is melted and the chicken is cooked through white, and no longer pink.
