Bacon Wrapped Egg Bites – Keto Breakfast Meal Prep


Quick and Easy muffin tin Egg Bites help me meal prep breakfast in advance and the prep work is SO easy. These Egg Bites average out to be 130 calories per Bite and 0.4 carbs, less than the Starbucks Bacon and Gruyere Sous Vide version (and considerably cheaper).


  • One dozen Eggs
  • Six strips of bacon (I prefer thick cut)
  • 1 cup of shredded cheese
  • Salt and Pepper, to taste
  • 1/4 cup Bacon Crumbles (optional)



Preheat your oven to 350 degrees.

Whisk 1 dozen eggs until smooth. Add in 1/4 cup bacon crumbles (optional), 1 cup of shredded cheese (I use multiple types of cheeses for flavor), salt and pepper. Mix again.

Next, cut 6 strips of bacon in half and line your muffin pan. It’s ok if they don’t go all the way around. This will depend on your cut of bacon and fat content. Pour your egg mixture into the bacon cups. It will settle into and around the bacon. It is very flavorful, as the egg absorbs the bacon fat while cooking. Note: If you are using extra thick bacon or XL eggs, make sure to not overfill your muffin tins to prevent bacon grease from spilling out. Or, set your muffin tin on a cookie sheet. 

Bake for 30-35 minutes. Store in airtight container in the fridge, reheat for 1 minute.
