Soft, Fluffy, Cream Cheese Waffles for a Low Carb Diet
I’ve apparently been missing out on a lifetime of amazing waffles. I recently got a Belgian Waffle Maker and decided to start experimenting with some low/no carb recipes. This is hands down the best recipe I came up with after multiple adjustments.
Prep: Turn on waffle iron so it is ready when you are done mixing.
Ingredients for 4 Waffles
- 4oz Cream Cheese
- 8 eggs
- 2 tsp vanilla extract
- 2 tbsp Swerve no-calorie Sweetener
- 2 tbsp melted butter
- 1.5 tsp baking powder
- 1/2 cup coconut flour
Combine cream cheese, eggs, vanilla extract, Swerve and melted butter – blend til smooth.
Add baking powder and coconut flour. Again blend batter til smooth. If it sits too long the batter will become thick. Immediately add batter to your already pre-heated non-stick waffle iron (or sprayed/coated with oil). Cook 5-7 minutes or until iron stops steaming.
Enjoy topped with your preference: butter, sugar free syrup, Lily’s Dark Chocolate Chips whipping cream etc.
