Creamy French Onion Dip Chicken | Easy Low Carb

Another weekday, another decision to make: what’s for dinner? I’m a busy mom, trying to cook most meals from scratch, which means I’m loading the dishwasher for the third time at 6pm to make room to cook again. While juggling a baby and a 3 year old.

I had no meal plan yesterday, it was a throw-it-together kind of night. We are currently doing a “pantry challenge” which is where you try to use up ingredients in your fridge or pantry instead of spending more money at the grocery store. It’s an effort to clean out the fridge, stop wasting produce that has gone bad, Waste Less – Spend Less. Searching the fridge I had chicken breasts, spinach with a lifespan of a couple more days, cheese and heavy cream picked out. I was trying to figure out how to make it actually taste good when I found the Dean’s French Onion Dip. Now, I had bought this to try with no-carb cheese crackers and it was fantastic, but I hadn’t made anymore cheese crackers and it was just sitting there slowly approaching it’s expiration. How bad could it be on chicken?

Let me tell you friends, I hit the CHICKEN JACKPOT with this recipe. This is now going to be a weekly dinner in The Keto Cooks household rotation not only because it is SO tasty, but because it is simple with minimal prep. We paired it with some simple creamed Spinach.

Ingredients

  • 3 Chicken Breasts, butterfly cut
  • 3-6 tbsp Dean’s French Onion Dip (2 carbs per tbsp)
  • salt and pepper

Directions

  1. Place chicken breast on a cutting board and, holding a hand flat on top of it, slice into one side of the chicken breast, from thick to thin but carefully not cutting all the way through to the other side. When you are done flip it over, opened and it should resemble a butterfly.
  2. Salt and pepper each side to taste. Salting helps keep the chicken moist, dont skip!
  3. Spread 1-2 tbsp of Dean’s French Onion dip on top of each chicken breast
  4. Bake at 350 F until chicken is cooked thru, about 20-30 minutes. (The safe, internal temp for cooked chicken is 165° F. We use a meat thermometer instead of the clock to gauge when all our meat is cooked thru, but not overcooked.)

And there it is, easy French Onion Dip Chicken, bubbly – cheesy – creamy.
